BALSAMIC PICKLED ONIONS

Ingredients
2 medium red onions or 1 large, peeled and sliced
1 teaspoon crushed black peppercorns
1 teaspoon dried oregano
2 teaspoons dried thyme
1/2 cup balsamic vinegar
1/4 cup red wine vinegar
3/4 cup water
1/4 teaspoon sea salt
2 tablespoons maple syrup
Instructions
Thinly slice the onion and transfer it to your preferred glass container.
Add the black peppercorns and set aside.
In a small pot, add the balsamic vinegar, red wine vinegar, water, maple syrup, herbs, and salt.
Stir well and bring to a simmer. Then, remove from the heat.
Pour the steamy hot vinegar mixture over the onions and seal the jar.
Shake the jar a few times and let it cool down on the counter for about one hour before placing it in the fridge for 48 hours.
After 48 hours remove onions from liquid and place in a clean airtight glass jar. Can be stored in the refrigerator for up to seven days.
Add to avocado toast, sandwiches and more. Enjoy!
