BALSAMIC PICKLED ONIONS

Ingredients

  • 2 medium red onions or 1 large, peeled and sliced

  • 1 teaspoon crushed black peppercorns

  • 1 teaspoon dried oregano

  • 2 teaspoons dried thyme

  • 1/2 cup balsamic vinegar

  • 1/4 cup red wine vinegar

  • 3/4 cup water

  • 1/4 teaspoon sea salt

  • 2 tablespoons maple syrup

Instructions

  • Thinly slice the onion and transfer it to your preferred glass container.

  • Add the black peppercorns and set aside.

  • In a small pot, add the balsamic vinegar, red wine vinegar, water, maple syrup, herbs, and salt.

  • Stir well and bring to a simmer. Then, remove from the heat.

  • Pour the steamy hot vinegar mixture over the onions and seal the jar.

  • Shake the jar a few times and let it cool down on the counter for about one hour before placing it in the fridge for 48 hours.

  • After 48 hours remove onions from liquid and place in a clean airtight glass jar. Can be stored in the refrigerator for up to seven days.

  • Add to avocado toast, sandwiches and more. Enjoy!
