PANCAKES
ALKALINE VEGAN
Ingredients
1 cup white spelt flour
1/2 teaspoon celtic sea salt
1/2 teaspoon organic baking soda
1 tablespoon coconut oil
2 teaspoons key lime juice
1 tablespoon agave nectar
1 FLAX EGG - (1 tablespoon ground flax seed + 2 tablespoons of cold water)
1 cup chilled coconut milk *be sure not to leave coconut milk in refrigerator for more than 1 hour or it will turn to solid.
avocado oil
optional: 1 tablespoon berries, bananas, or walnuts - can be mixed into the batter or used as a topping.
Instructions
You will need a large skillet or non stick pan.
Combine dry ingredients in medium bowl.
Prepare Flax Egg in small separate bowl (1 tablespoon ground flax seed + 2 tablespoons of cold water) and set aside.
In a small bowl or jar measure out coconut milk and add key lime juice to mixture and set aside.
In your medium bowl with dry ingredients add syrup and coconut oil and give it two or three stirs.
Grab your flax egg mixture and give it a few stirs.
Create well in center of your medium bowl and add flax egg mixture.
Slowly pour in milk be sure not to over mix batter should be thick but pourable/scoop-able.
Lightly coat skillet with vegan butter or avocado oil on medium heat drop 1/4c. batter into pan.
Flip when batter bubbles or solidifies, brown on both sides.
Serve and enjoy!
Makes 12 - 16 4 inch pancakes
