PANCAKES
EGG - FREE
Ingredients
1 cup white spelt flour
1/2 teaspoon celtic sea salt
1/2 teaspoon organic baking soda
1/2 teaspoon cream of tartar
1 tablespoon grass fed butter
2 teaspoons key lime juice
1 tablespoon agave nectar
1 FLAX EGG - (1 tablespoon ground flax seed + 2 tablespoons of cold water)
3/4 - 1 cup cold coconut or walnut milk - note*: The amount of liquid used will determine how thick or thin the pancake batter will be and how you prefer your pancakes.
coconut oil or grass milk butter
optional: 1 tablespoon berries, bananas, or walnuts - can be mixed into the batter or used as a topping.
Instructions
You will need a large skillet or non stick pan.
Combine dry ingredients in medium bowl.
Prepare Flax Egg in small separate bowl (1 tablespoon ground flax seed + 2 tablespoons of cold water) and set aside.
In a small bowl or jar measure out milk and add key lime juice to mixture and set aside.
In your medium bowl with dry ingredients add agave and butter and give it two or three stirs.
Grab your flax egg mixture and give it a few stirs.
Create well in center of your medium bowl and add flax egg mixture.
Slowly pour in milk be sure not to over mix batter should be thick but pourable/scoop-able.
Lightly coat skillet with butter or avocado oil on medium heat drop 1/4c. batter into pan.
Flip when batter bubbles or solidifies, brown on both sides.
Serve and enjoy!
Makes 12 - 16 4 inch pancakes
