SOUTHERN STYLE CORNBREAD

Ingredients
1 1/4 cup organic cornmeal
1 cup white spelt flour
1/2 teaspoon celtic sea salt
1 teaspoon baking soda
1/4 cup + 1 tablespoon melted grass-fed butter
1/2 cup agave nectar
1 FLAX EGG (1 TBSP ground flax seed + 2 TBSP water)
1 1/4 cup grass-fed milk
2 teaspoons key lime juice
Instructions
Preheat the oven to 400°F/200°C.
Lightly grease 8x8 square baking pan with grass-fed butter. Set aside.
Prepare Flax Egg in small separate bowl (1 tablespoon ground flax seed + 2 tablespoons of cold water) and set aside.
In a small bowl mix the milk and key lime juice together. Let sit for at least 3 mins to create buttermilk.
In a large bowl mix all dry ingredients (cornmeal, flour, sea salt, baking soda and agave) together. Set aside.
In milk mixture add all the other wet ingredients (Flax Egg and melted butter) together slowly to incorporate, then a little quicker to mix together.
Pour the wet ingredients into the dry mix until fully combined and smooth.
The batter should be thick and may have a few lumps but pourable.
Pour batter into the pan and using a spatula, smooth down into a even layer.
Bake for 22 - 25 mins, until tooth pick comes out clean.
Move pan to wire rack and allow to cool for at least 10 minutes.
Slice, serve and enjoy!
