SOUTHERN STYLE CORNBREAD

Ingredients

  • 1  1/4 cup organic cornmeal

  • 1 cup white spelt flour

  • 1/2 teaspoon celtic sea salt

  • 1  teaspoon  baking soda

  • 1/4 cup + 1 tablespoon melted grass-fed butter

  • 1/2 cup agave nectar

  • 1 FLAX EGG  (1 TBSP  ground flax seed + 2 TBSP  water)

  • 1 1/4 cup grass-fed milk

  • 2 teaspoons key lime juice

Instructions

  • Preheat the oven to 400°F/200°C.

  • Lightly grease 8x8 square baking pan with grass-fed butter. Set aside.

  • Prepare Flax Egg in small separate bowl (1 tablespoon ground flax seed + 2 tablespoons of cold water) and set aside.

  • In a small bowl mix the milk and key lime juice together. Let sit for at least 3 mins to create buttermilk.

  • In a large bowl mix all dry ingredients (cornmeal, flour, sea salt, baking soda and agave) together. Set aside.

  • In milk mixture add all the other wet ingredients (Flax Egg and melted butter) together slowly to incorporate, then a little quicker to mix together.

  • Pour the wet ingredients into the dry mix until fully combined and smooth.

  • The batter should be thick and may have a few lumps but pourable.

  • Pour batter into the pan and using a spatula, smooth down into a even layer.

  • Bake for 22 - 25 mins, until tooth pick comes out clean.

  • Move pan to wire rack and allow to cool for at least 10 minutes.

  • Slice, serve and enjoy!
