THAI JASMINE RICE
VEGAN
Ingredients
2 cups thai jasmine rice
3 cups distilled water
1 teaspoon celtic sea salt
1 tablespoon dried thyme
two key limes, juiced
Prep
Soak 2 cups dry thai jasmine rice in distilled or regular water for 5 mins.
Wash 3 - 4 times or until rice water is not cloudy.
Instructions
In medium size pot (one with a tight lid) add distilled water, celtic sea salt, dried thyme and key lime juice.
Bring water to a rolling boil with NO LID on high.
Add clean Thai jasmine rice to pot, cover and do not lift lid during cooking!
Keep lid on then remove from heat.
Let sit about 15 - 20 min until water has completely been absorbed by the rice.
Fluff with rubber spatula or rice paddle, then serve.
Makes 4 cups cooked rice
