THAI JASMINE RICE

VEGAN

Ingredients

  • 2 cups thai jasmine rice

  • 3 cups distilled water

  • 1 teaspoon celtic sea salt

  • 1 tablespoon dried thyme

  • two key limes, juiced

Prep

  • Soak 2 cups dry thai jasmine rice in distilled or regular water for 5 mins.

  • Wash 3 - 4 times or until rice water is not cloudy.

Instructions

  • In medium size pot (one with a tight lid) add distilled water, celtic sea salt, dried thyme and key lime juice.

  • Bring water to a rolling boil with NO LID on high.

  • Add clean Thai jasmine rice to pot, cover and do not lift lid during cooking!

  • Keep lid on then remove from heat.

  • Let sit about 15 - 20 min until water has completely been absorbed by the rice.

  • Fluff with rubber spatula or rice paddle, then serve.

Makes 4 cups cooked rice
