BASIL FRIED RICE

ORGANIC + VEGAN OPTION

Ingredients

  • 3 cups chopped zucchini

  • 1 finely chopped green pepper

  • 1 finely chopped red pepper

  • 1 cup finely sliced red or vidalia onion

  • 1 tablespoon olive oil

  • 1/4 teaspoon celtic sea salt

  • 1/4 teaspoon ground black pepper

  • 1 cup chopped fresh basil

  • 3 tablespoons coconut aminos

  • 1 tablespoon water

  • 3 cups cooked thai jasmine rice

  • sesame seed oil

  • Optional: sesame seed topping

  • Optional: 1 lb organic ground turkey or grass-fed ground beef


Prep

  • Cook your Thai Jasmine Rice and set aside. Please click link for instructions.

  • While you are waiting for rice to set, wash all fruit and leaves thoroughly, be sure to pat dry fresh basil and romaine lettuce and set aside.

  • Chop zucchini and basil.

  • Finely chop red pepper and green pepper.

  • Finely slice onion.

  • Gather all of your ingredients and make sure they are in arms length for a smooth cooking experience.

SKIP IF PREPARING VEGAN OPTION*

  • In a separate pan, brown 1 pound of organic ground turkey

    INGREDIENTS

    1 lb organic ground turkey or grass-fed beef
    1 tablespoon onion powder
    1/4 teaspoon sea salt
    1/4 teaspoon black pepper
    sesame seed oil

    INSTRUCTION

  • Combine all ingredients and medium size pan on medium heat for a total of 7 mins.

  • Flip and chop after 3 minutes, then cook until light brown in color.

Instructions

  • In large pan add 1 tablespoon olive oil and sprinkle sea salt and turn on medium heat.

  • Add zucchini, green pepper, red pepper and onion, sauté on medium heat for 10 mins. Stirring occasionally.

  • Reduce heat to low for 5 mins then add black pepper and basil, stir mixture and flip occasionally.

  • Create a large well in the center of the mixture and add 2 tablespoons of sesame seed oil and thai jasmine rice on medium heat for 2 mins.

  • After one minute incorporate rice and meat if this option was chosen into mixture evenly flipping often. Be sure to keep an eye on the pan because the rice can burn very easily.

  • Reduce heat to medium/low heat and add coconut aminos and water.

  • Increase heat to medium for an additional two minutes. Flipping often. Rice will begin to show a light brown crisp.

  • Remove from heat, plate and sprinkle sesame seed topping, if desired.

  • Serve and enjoy!
